     4 eggs
200g flour
200g sugar
200g butter
The grated zest of one lemon


Beat 200g of softened butter to a creamy consistency in a bowl.  Add 200g of sugar and continue beating to incorporate air.  Add four (4) egg yolks one at a time, a little salt, the flavouring and 200g of flour.  Lastly, delicately, fold in the four (4) egg whites beaten to a stiff consistency with a pinch of salt.  Transfer the mixture to one of our SILIKOMART silicone moulds (see some appropriate images below) and bake in a preheated oven at 180°C for approximately an hour and a quarter.  Check that the cake is baked with a tooth pick, remove from the oven and set aside to cool for at least five (5) minutes before removing from the mould and cooling on a cake mesh.


- with cocoa: add half a sachet of baking powder to the flour and add three (3) tablespoons of cocoa to the finished mixture, stirring with a fork to get a marbled effect
- with raisins: take 120g of raisins, add half to the mixture and sprinkle the remaining half on top of the cake just before baking
- with almonds: beat one egg white with two tablespoons of sugar, add 100g of chopped almonds and add to the mixture once already in the mould, using a fork to mix
- with hazelnuts: add 150g coarsely crushed toasted hazelnuts to the mixture
